Cooked Meat Medium is used for the cultivation and maintenance of anaerobic organisms, especially pathogenic clostridia, differentiating saccharolytic from proteolytic species. This medium permits growth from a small inoculum, important for clinical specimens. It is also recommended in standard methods for food testing for the enumeration and identification of Clostridium perfringens.
